Ingredients
- 2 ripe mangoes
- 1 lime juice
- 100 g sugar (or honey for a more natural version)
- 100 ml water
- Optional: a few mint leaves for freshness
Recipe
Prepare the syrup: heat the water and sugar in a saucepan until completely dissolved. Leave to cool.
Peel and chop the mangoes, then blend with the lime juice until smooth.
Add the cooled syrup to the mango purée and mix well.
Pour the mixture into the Happy Sorbets ice-cream maker, and leave to churn for around 30 minutes until creamy.
Once the 30 minutes have elapsed, transfer the ice cream to a container and place in the freezer for an hour before serving.
Tip:
For an even more refreshing effect, add a few zests of lime just before serving!
