Watermelon sorbet with Happy Sorbets

Ingredients (serves 4 to 6):

  • 800 g watermelon flesh (seedless)
  • 100 g sugar (adjust according to ripeness of fruit)
  • 1 tablespoon lime (or yellow) juice
  • A few fresh mint leaves (optional)

Preparation: 

Prepare the watermelon: Cut the watermelon, remove the seeds, then blend the flesh until smooth.

Add sugar and lemon: Add the sugar and lemon juice to the watermelon juice. Mix well until the sugar is completely dissolved.
(Tip: you can heat the mixture slightly in a saucepan to dissolve the sugar more quickly, then leave to cool completely).

Chill the mixture: Place the mixture in the refrigerator for at least 2 hours to chill before rolling.

Ice-cream maker: Pour the mixture into your Little Balance Happy Sorbets ice-cream maker, and whirl according to the machine's instructions for 20 to 40 minutes, until a smooth sorbet forms.

To serve or store: Serve immediately for a fresh granita/sorbet texture, or place in an airtight tray in the freezer to firm up further.
