Tian Provençal à la Easy Veggie

Ingredients

  • 2 zucchinis
  • 2 eggplants
  • 4 tomatoes
  • 1 red onion
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme
  • Salt and pepper
  • Goat's cheese (optional)

Recipe

  1. Preheat your oven to 180°C.
  2. Using your Easy Veggie vegetable slicer, thinly slice the zucchinis, eggplants, tomatoes and onion.
  3. Arrange the vegetable slices vertically and alternately in an oiled gratin dish.
  4. Sprinkle with chopped garlic, thyme, salt and pepper.
  5. Drizzle with olive oil and, if desired, add a few slices of goat's cheese.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and continue cooking for a further 15-20 minutes, until the vegetables are tender and lightly browned.
