Ingredients
- 2 zucchinis
- 2 eggplants
- 4 tomatoes
- 1 red onion
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme
- Salt and pepper
- Goat's cheese (optional)
Recipe
- Preheat your oven to 180°C.
- Using your Easy Veggie vegetable slicer, thinly slice the zucchinis, eggplants, tomatoes and onion.
- Arrange the vegetable slices vertically and alternately in an oiled gratin dish.
- Sprinkle with chopped garlic, thyme, salt and pepper.
- Drizzle with olive oil and, if desired, add a few slices of goat's cheese.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and continue cooking for a further 15-20 minutes, until the vegetables are tender and lightly browned.
