Cod accras with Air Fryer Crousty Light

Ingredients

  • 100g salt cod
  • 750g wheat flour
  • 1/3 sachet baking powder
  • 6cl water
  • 1/4 onion
  • 1 civet
  • 1 sprig flat-leaf parsley
  • 1 garlic clove
  • 1/4 West Indian chilli
  • 1 pinch 4 spices
  • Salt and pepper
  • A little cornflour

Recipe

The day before, desalinate the cod. Soak it in water and change the water 2 or 3 times.

Poach the cod for about ten minutes, then crumble it, removing the bones and skin.

Chop the onion, chives, parsley, garlic and chili pepper.

In a bowl, combine the flaked cod, chopped onion, civet, garlic, chili pepper and 4-spice powder.

Add the flour

Season with salt and pepper.

Refrigerate for 24 hours.

Stir in the yeast. 

Form the dough into small balls, roll in cornflour and place in the drawer of your Air Fryer Crousty light. Spray with a little oil

Bake at 200°C for 15 minutes, until golden and crisp. 

Serve with dog sauce for unrivalled flavour!
