Leek and goat cheese croque with Speed'n Mixt

Ingredients for 2 croques :

  • 4 slices sandwich bread
  • a small leek
  • 2 slices bacon (cured or white ham, as you prefer)
  • a little mustard
  • 4 slices goat cheese

Wash, chop and fry the leeks in a frying pan. Add a little water if necessary, and cook over very low heat until the leeks have absorbed all the liquid. Set aside.

Take a slice of sandwich bread and spread a little mustard on it. Add a few leeks, then top with a slice of bacon and 2 slices of goat's cheese. Add another spoonful of leeks and finish with a slice of bread also spread with mustard (on the leek side).

Bake in the appliance using the special croque-monsieur baking trays.
