Ingredients for 8 to 10 waffles
- 2 medium carrots
- 75g ham matches
- 250g flour
- 25cl semi-skimmed milk
- 50g melted butter
- 2 eggs
- salt (do not add salt if using semi-salted butter)
- pepper
Wash, peel and grate carrots. Set aside for later use.
Separate egg yolks and whites.
Pour the flour into a bowl. Make a well in the center and pour in the yolks, melted butter and milk. Mix well to obtain a homogeneous dough. It's a little thick, but that's normal.
Whisk the egg whites until stiff, then gently fold into the mixture using a spatula. Add the grated carrots, ham matches, salt and pepper.
Cover the bowl with a clean tea towel and leave the batter to rest for 20/30 minutes at room temperature before baking the waffles.
