Prime rib with Chimichurri sauce

Ingredients:

  • 1 prime rib 
  • 1/2 bunch coriander
  • 1/2 bunch flat-leaf parsley
  • 1/2 bunch basil
  • 2 limes
  • 2 anchovies
  • 2 garlic cloves
  • 1 red pepper
  • 1 tablespoon red wine vinegar

Recipe:

Prepare Chimichurri sauce by mixing coriander, flat-leaf parsley, basil, lime juice, crushed anchovies, pressed garlic, chopped chilli pepper and red wine vinegar.

Let meat stand at room temperature for at least 1 hour before cooking. Season with salt and massage with olive oil.

Preheat the plancha over high heat for 15 minutes and oil with a brush.

Place the prime rib on the plancha and cook until a crust forms. Turn the meat over and cook the other side according to your preference.

Remove the prime rib from the plancha and let it rest on an aluminum foil-covered rack for about 5 minutes to allow the meat to relax.

Slice the meat and serve with Chimichurri sauce.
