Ingredients for 12 to 14 waffles
- 400g flour
- 200g butter at room temperature
- 2 eggs
- 140ml milk
- 2 packets vanilla sugar
- a pinch of salt
- 2 teaspoons dry baker's yeast
- 160g pearl sugar
Place the flour, salt, vanilla sugar, eggs, baking powder and milk in the bowl of a food processor. Knead with the hook for 3/4 minutes.
When the dough is smooth, stir in the room-temperature butter and knead for 8/10 minutes.
Cover the bowl with a tea towel and leave to rise for 2 hours at room temperature.
Pour the dough onto a floured work surface, and fold in the pearl sugar by hand.
Divide the dough into 12 (or 14 if you want them a little smaller) and shape into small balls. Place on a baking tray lined with baking paper and leave to rest for 45 minutes / 1 hour.
Heat the waffle iron and cook the waffles to your liking: a little golden, slightly crispy on the outside and soft on the inside.
