Ingredients
- 500g potatoes
- 2 eggs
- 100g chorizo, thinly sliced
- 50g flour
- 100g cantal cheese
- 40g butter
- 150g heavy cream
- salt
- pepper
- nutmeg
Peel and grate potatoes.
In a bowl, beat the eggs and add the crème fraîche, salt (very little if you're using semi-salted butter), pepper and nutmeg.
Add flour and mix until smooth. Add the grated potatoes and melted butter.
Grate the cantal and cut the chorizo into small pieces. Add to previous mixture.
Heat the waffle iron and cook the waffles to your liking!
